How to make the best bolognese sauce

How to make the best bolognese sauce, also known as “ragu alla bolognese”? Follow the Italian Food Boss authentic recipe, demonstrated step by step in this video to understand what all those Italian people are revving about.

Equipment

  • Terracotta pot
  • Knife
  • Pan

Ingredients

  • 400 gr beef mince
  • 400 gr pork mince
  • 800 ml Tomato Passata (tomato concentrate preferred if you have it)
  • 2 onions
  • 1 carrot
  • 1 celery
  • 5 bay leaves
  • 1 glass red wine
  • 1 glass full-fat milk
  • olive oil
  • salt and pepper

Procedure

  • Finely grate the onions, the carrot and the celery;
  • In a large pot, pour some olive oil, and when it’s hot add what we just grated – leave to gently fry (make ‘soffritto’);
  • After a few minutes, add the minced meat – keep cooking and stirring;
  • Add the red wine and keep stirring. Add the Passata di pomodoro. Cook at low heat for a couple of hours: the longer you cook it, the better your bolognese sauce will taste;
  • After 1/1.5 hours of cooking time, add some full-fat milk and make sure it gets slowly absorbed by the meat: this will give extra cremosity to the bolognese sauce;
  • Add salt as required but towards the end of the cooking;
  • When your bolognese sauce has the right consistency, you are ready to serve it!
  • Add some Parmesan cheese and some freshly cracked black pepper if you are serving your bolognese sauce with pasta – as I showed in my video;

Add some full-fat milk in the sauce for extra creaminess and taste!
Do not rush through this recipe! Take your time, let the sauce cook at low heat for at least 3 hours. Your bolognese sauce will taste amazing.
