Roasted eggplant in oven recipe

How to make roasted eggplant in the oven, the Italian way? Simple! Follow this recipe and you will learn how to cook a fantastic roasted eggplant in slices, mixed with some of authentic Italian toppings.

Equipment

  • Oven Tray
  • Knife

Ingredients

  • 2 eggplants
  • 6 tomatoes
  • 6 bocconcini mozzarella
  • capers
  • 100 gr black olives pitted
  • garlic
  • fresh mint
  • Olive Oil
  • salt and pepper

Procedure

  • Cut the eggplants in slices of about 3-5mm thickness, put salt on top and leave in a sieve for at least half an hour to lose some liquid;
  • In a bowl, mix some chopped tomatoes, finely chopped garlic, some capers, some pitted black olives and lots of mint. Mix with your hand;
  • When the eggplants have released some liquid, lie them on a tray on top of a sheet of baking paper;
  • Cover the eggplant slices with the mix we prepared in the bowl;
  • Sprinkle olive oil generously and put in the oven for about 30 minutes (200°C/392°F);
  • After about half an hour, take the tray out of the oven and break the mozzarella on top of the eggplant slices. Put back in the oven for 3 minutes;
  • Serve hot, warm or cold – as you prefer! A sprinkle of fresh olive oil and some black pepper would be nice!
  • ENJOY!

Italian Food Boss Special Tip

Only add the mozzarella at the very end otherwise it’ll burn if you let it cook in the oven for too long. 3 minutes is plenty!
