This snack is ideal for children of all age (trust me: they will love it) because of the melting cheese surprise inside the potato cakes which will make everybody scream for more.

Potato Cakes Ham Cheese
Equipment
- Masher
Ingredients
- 500 gr potatoes
- 50 gr Provolone cheese
- 80 gr ham
- 30 gr Parmesan cheese grated
- 40 gr potato starch
- 20 ml extra-virgin olive oil
- salt and pepper
Procedure
- Boil the potatoes and mash them with a fork;
- Slowly add the potato starch, a couple of spoonful of oil, the grated Parmesan cheese, until you get a nice mushy cream;
- Shape the mix in discs (we'll call them 'potato cakes');
- Cut some provolone cheese in cubes, put it in the middle of the potato cakes you just created. Add some ham too;
- Use another cake to cover the cheese and the ham. Seal well with your hands;
- Heat some oil in a pan and let each side of the potato cakes cook for 7-8 minutes;
- Serve and eat immediately and hot;
- ENJOY!
