Potato Bake Italian recipe – Pitta di Patate – Potato pie

Today we’ll taste my version of the delicious “Pitta di Patate Salentina” (Potato Bake Italian recipe), a specialty from my Salento region! It is basically a potato pie/cake, the Italian way.

There are many versions of this southern Italian classic and today I decided to show you how to make this Potato Bake using canned tuna, olives and capers.

You could choose to use ham and mozzarella instead, whatever floats your boat! I particularly like this dish when it’s been resting for a few hours after taking it out of the oven: that is when the crunchiness of the top layer (made up of grated Parmesan cheese and breadcrumbs) mixes best with the kicking tomato sauce with lots of onions!

Potato Bake Italian recipe - Pitta di Patate from Puglia - Potato pie from Salento

Today we'll taste my version of the delicious “Pitta di Patate Salentina” (Potato Bake Italian recipe), a specialty from my Salento region! It's basically a Potato Pie, cooked the Italian way!

Equipment

  • Oven Tray
  • Potato Masher

Ingredients

  • 1 kg potatoes
  • 200 gr Parmesan cheese grated
  • 60 gr breadcrumbs
  • 180 gr canned tuna in brine
  • 680 ml Tomato Passata
  • 2 onions big
  • black olives
  • capers
  • 2 eggs
  • parsley
  • mint
  • salt
  • olive oil extra virgin

Procedure

  • First thing, boil the potatoes and when they are soft enough, mash them in a bowl.
  • In the meanwhile, get some sauce to start cooking: chop 2 big onions roughly and sweat them in a pan;
  • After a few minutes when the onions started to golden, add the capers, the olives and the tuna. Keep cooking at low heat for 20/30 minutes - stir often;
  • In the bowl with the mashed potatoes, add the 2 eggs, some parsley and mint finely chopped, most of the Parmesan cheese and breadcrumbs, a couple of spoons of the tomato sauce. Mix with your hands until you get a paste of good consistency;
  • Start layering the potato paste and the tomato sauce in an oven tray;
  • Pour some olive oil at the bottom of the oven tray, sprinkle some breadcrumbs, then form the first layer with the potato paste (about 1 cm high), then add a rich layer of tomato sauce. Then, cover the sauce with one layer of potato paste, add a bit of sauce on top and finally cover everything with the remaining Parmesan cheese and breadcrumbs.
  • Put in the pre-heated oven at 200 degrees for 45-60 minutes.
  • You can eat the potato bake (Pitta di Patate from Salento!) either warm or cold
  • ENJOY!
