It is a habit outside of Italy to actually add cream to many pasta sauces while in fact there are ways to make your pasta creamy without having to use any cream!
That is exactly how I’m going to cook this recipe today: a bunch of high quality Italian sausages, a handful of fresh mushrooms, a glass of white wine, rosemary and Pecorino cheese!

Pasta with Sausage and mushrooms
Equipment
- Knife
- Pan
Ingredients
- 400 gr Pasta Rigatoni De Cecco in my version
- 4 Italian sausages
- 400 gr mushrooms
- rosemary
- 1 glass white wine
- 80 gr Pecorino cheese
- olive oil
- salt and pepper
Procedure
- Cut the mushrooms in quarters;
- In a large pot, pour some olive oil, and when it’s hot add the mushrooms and let them gently fry until they gain some colour;
- In the meanwhile, get rid of the skin of your sausages and put the meat in a bowl;
- Add the sausage meat to the pot with the mushrooms, pour the glass of white wine in and let evaporate;
- Add some rosemary as well – this will give extra flavour and smell;
- Get some pasta cooking going: as usual, put some water in a large pan, make it boil and when boiling add the pasta in there;
- When the pasta is VERY ‘al dente’, mix the pasta with the sausage and mushrooms sauce we created;
- This is now where everything is coming together: slowly add the Pecorino cheese (which will start melting), use some of the boiling pasta water to create that creaminess which will make this dish special;
- ENJOY!
