As some of you will know by now, I am originally from Puglia, a beautiful region in the South of Italy – right at the heel of the Italian boot! This pasta with sausage and broccoli is cooked quite often down there, mainly due to the abundance of fresh broccoli rabe we have there. I hope you find this traditional recipe tasty (and why wouldn’t you!!) and you give it a go at cooking it!

Pasta with sausage and broccoli
Equipment

Ingredients
- 400 gr Pasta
- 300 gr Italian sausage (salsiccia with fennel)
- 1 broccoli
- garlic
- olive oil
- rosemary
- 80 gr Pecorino cheese
- chili (if you want...)
Procedure
- Put a large pot of salted water on the stove to boil the broccoli and only when it starts boiling add the chopped broccoli;
- Leave the broccoli to boil for up to 10 minutes, use a lid;
- Heat a large pan with abundant EVOO (Extra Virgin Olive Oil) and a couple of garlic cloves;
- In the meanwhile, open the sausage (βsalsicciaβ) and get rid of the skin using the technique I show in the video; then put the meat in the pan;
- Add the boiled broccoli into the pan, add the rosemary and extract the garlic when ready (about 6-7 minutes in the cooking). Add chilly if you wish;
- Use the same water in which you boiled the broccoli to now cook the pasta;
- Look after the βsausage and broccoliβ sauce in the pan, it has to become creamy β add some boiling water from the pasta pot to amalgamate the sauce;
- When the pasta is al dente, mix it with the sauce, add pecorino on top and buon appetito!
