Pasta with burrata and cherry tomatoes: in the South of Italy, we do it better! This is a Puglia special pasta, coming directly from the heel of the Italian boot. To cook pasta with burrata, you will need (for 4 people):

  • 400gr / 14oz pasta
  • burrata (creamy Italian fresh cheese)
  • 300gr / 10.5oz cherry tomatoes
  • Garlic
  • Extra-virgin olive oil
  • Oregano
  • Parmesan cheese 
  • Salt and Pepper
Procedure:
 
  1. Put a large pot of salted water on the stove to boil the pasta;
  2. Cut the cherry tomatoes and marinade them in oil, salt and pepper for up to 2 hours;
  3. Heat a large pan with abundant EVOO and a couple of garlic cloves;
  4. In the meanwhile, open the burrata and scoop the internal creamy cheese;
  5. Add the tomatoes in the large pan, make gently fry for a few minutes then add the creamy cheese from the burrata. 
  6. When the pasta is very al dente, mix with the tomatoes & burrata in the large pan;
  7. Look after this pasta & sauce mix – add some boiling water from the pasta pot to amalgamate the sauce;
  8. When the mix is ready, put on a plate and add the harder part of the burrata on top. Pepper and oregano to finish – enjoy!
