Roasted chicken with veggies: Pick some vegetables from the ground, the best chicken you can get your hands on, fresh Italian herbs… and a bit of time! The result will be this amazing roasted chicken with vegetables that will transform every cloudy Sunday into a food feast!

You will need (for 4 people):

  • 1 whole chicken (mine was about 1.6kg / 56.4oz)
  • 10 potatoes
  • 3 sweet potatoes
  • 2 onions
  • 3 carrots
  • 1 lemon
  • a handful of tomatoes
  • Extra-virgin olive oil
  • Fresh herbs (sage, rosemary, mint, basil, thyme)
  • Salt and Pepper
Procedure:
 
  1. Create a emulsion with the oil and the fresh herbs finely cut. Let it rest while you chop the vegetables;
  2. Pour some oil into a flat oven tray and put all the chopped vegetables in the tray;
  3. Put the chicken in the middle of the pan (on top of the veggies) breast down and start massaging the chicken with the emulsion;
  4. Season with oil, salt and pepper. Make some holes in the lemon using a fork and insert the lemon in the chicken’s cavity;
  5. Now insert the tray in the oven and let it cook for about 2/2.5 hours, making sure that every 30 minutes or so you brush the chicken skin with the liquid which will be produced.
  6. 1 hour into the cooking, turn the chicken the other way.
