Today I will show you how to cook pasta with bacon (or pancetta) mixed with some beautifully roasted tomatoes. This is a REAL Italian dish that combines some ingredients which are cornerstone of Italian cuisine.

Take your time to roast those tomatoes, because the longer it’ll take the better they’ll taste. The juices hidden in some sweet tomatoes can really intensify through the slow roasting process… and that’s exactly what we want!

Choose some high quality bacon (pancetta or guanciale should work too) to top your pasta, and then just imagine the burst of flavour in your mouth when you’re biting off that pasta, your lovely roasted tomatoes and a chunky piece of bacon. Must be exceptional, right!!

How to cook pasta with bacon and roasted tomatoes

Today I will show you how to cook pasta with bacon (or pancetta) mixed with some beautifully roasted tomatoes. This is a REAL Italian dish that combines some ingredients which are cornerstone of Italian cuisine.

Equipment

  • Knife

Ingredients

  • 500 gr cherry tomatoes
  • 400 gr Pasta
  • 300 gr pancetta
  • oregano fresh
  • garlic
  • 30 gr Parmesan cheese grated
  • salt and pepper

Procedure

  • Lay the cherry tomatoes on an oven tray and cook for at least 2 hours at 120/130 Celsius (250 F);
  • In the meanwhile, slice the bacon in strips and almost "fry" them in abundant olive oil;
  • When they are "fried" (crunchy outside and soft inside), take them off the oil and let them rest. But do NOT throw that oil!;
  • Add the garlic and the fresh oregano to the oil, let the flavour mix up for a couple of minutes;
  • Put some water to boil and, when it's boiling, tip the pasta in;
  • Now it's time to add the roasted tomatoes is. Squeeze them gently so they release all the beautiful nectar. Remove the garlic and add some of the boiling water if required;
  • When the pasta is al dente, put it in the pan with the tomatoes and let it mix. Add the bacon so all flavours mix well;
  • When the pasta has captured the flavours from everything else, sprinkle some Parmesan cheese on top and serve;
  • ENJOY!
