Baked Potatoes with Olives - Italian Style

Baked Potatoes with Olives - Italian Style

Equipment

  • Knife
  • Oven Tray

Ingredients

  • 700 gr potatoes
  • 1 red onion
  • 80 gr black olives pitted
  • 3 sundried tomatoes
  • oregano
  • 2 tsp hot paprika
  • salt and pepper
  • olive oil extra-virgin

Procedure

  • Chop the potatoes in smallish cubes and put in an oven tray (make sure that you have some olive oil at the bottom of the tray;
  • Finely chop the red onion and put on top of the potatoes;
  • Now it's time to chop the black olives;
  • Then slice the sundried tomatoes and put everything in the tray ;
  • Sprinkle oregano, salt, black pepper to your taste. Add a couple of teaspoons of hot paprika;
  • Pour abundant extra-virgin olive oil on everything and then insert in the pre-heated oven at 180C (356F) for about 1 hour;
  • Make sure that you stir the potatoes a couple of times while they are roasting;
  • ENJOY
