Fried Tomatoes – Pomodori Scattarisciati: get your suitcase ready: with this recipe you are going to move to the South of Italy, in Salento! This is an ‘old school’ nonna classic: pomodori ‘scattarisciati’ (fried tomatoes).
This region of Italy is famous for their sweet, red tomatoes and capers that grow wildly everywhere. That’s where our nonnas got the idea: mix some of the simplest ingredients coming from the area, to create an incredibly tasty dish: fried tomatoes!

For the fried tomatoes recipe, you will need (for 4 people):
- 20 small tomatoes
- 2 onions
- A handful of capers
- Extra-virgin olive oil
- 1 glass of red wine
- Oregano
- Salt and Pepper
- Pour some extra-virgin olive oil in a pan. Be generous;
- Gently fry some onions (that you have previously roughly chopped) in the pan;
- Put the tomatoes in the pan, add the capers, some salt and stir quite regularly for the next 20 minutes;
- Pour the red wine, add the oregano (and the chili, if you wish…) and keep regularly stirring;
- ENJOY, perhaps on some pasta or on a toasted slice of bread!
That’s how it’s done in Italia!
