I will show you a very easy recipe to cook a simple oven baked trout in less than 30 minutes. Oven-cooked trout makes for a light and nutritious meal, with minimal ingredients and so very easy to prepare!
In this recipe, I am cooking a Coral Trout, which is a quite large variety of trout mainly found in the Pacific Ocean – but don’t worry, any trout would do! Baking a Coral Trout in foil sheet Italian style (we call it “al cartoccio”) helps the fish cook perfectly. While they bake, juices form at the bottom of the “cartoccio”.
This is delicious when spooned over the cooked trout when serving. Other ingredients I add to the middle of the fish are lemon slices, tomato slices, garlic (“in camicia”, skin on!) and, of course, lots of parsley!

Simple Oven Baked Trout
Equipment
- Oven Tray
- foil sheet
Ingredients
- 1 trout
- 0.5 lemon sliced
- 0.5 tomato sliced
- 250 gr cherry tomatoes
- olive oil extra virgin
- parsley
- garlic
- salt and pepper
Procedure
- Make sure you clean your trout first (ask your friendly fishmonger to remove gut/entrails);
- Slice a lemon and a tomato: stuff the trout with these slices, the garlic cloves and abundant parsley;
- Season with salt and pepper, drizzle some extra-virgin olive oil on top;
- Lay a foil sheet and place the trout in the middle of the sheet;
- Toss some cherry tomatoes around the trout, add some lemon slices on top of the fish;
- Accurately wrap the fish and the other ingredients in the foil sheet, leaving a small gap at the top;
- Bake for about 30 minutes (depending on the size of the fish) at about 180C degrees;
- Serve warm and... ENJOY!
