Still stuck at home? Cook this easy pasta with pancetta mixed to a cream of potatoes and forget your sorrows!
I like potatoes a lot in any cooking style, but I do enjoy my regular fix of bacon or pancetta… so I decided to combine the 2 to create a nuclear bomb!
We are going to boil the potatoes first and then mash them into a cream with the grated Pecorino cheese. We are then mixing this potato cream with a generous portion of Rigatoni ‘al dente’ and a block of pancetta cut into small squares. Getting goosebumps?! Cook it and eat it right now then!

Pasta with pancetta and potato cream
Equipment
- Knife
- Blender/masher
Ingredients
- 200 gr pasta
- 2 potatoes
- 1/2 onion
- 30 gr Pecorino cheese grated
- 250 gr Pancetta
Procedure
- Cut the potatoes in quarters and boil them;
- Once soft, mash them with a blender mixing the Pecorino cheese, salt and pepper and a bit of the cooking water;
- Chop half a onion and gently fry it in a pan;
- Cut the Pancetta in small squares and add it to the onion;
- Once the pasta is 'al dente', add it to the Pancetta and stir for 1 minute;
- add the potato cream and a bit of the cooking water to create a creamy result;
- Serve immediately with black pepper and Pecorino cheese topping;
- ENJOY!
