This recipe uses the peppers for the sauce base, giving you a reddish velvety sauce. It is made by first sautéing diced chicken that has been cooked in Italian red wine, then add the creamy sauce plus olives and capers: simply AMAZING!

Diced chicken and red peppers cream sauce
Equipment
- blender
- Pan
Ingredients
- 400 gr chicken diced
- 2 red peppers
- 1 glass red wine
- 1/2 red onion
- 60 gr black olives pitted
- 40 gr capers
- garlic
- salt and pepper
Procedure
- Finely chop half of a red onion and let it sweat in a pan with extra-virgin olive oil;
- De-seed and dice 2 red peppers, then add them to the pan. Put the lid on and let all cook for 10-15 minutes (add some water as well);
- Once the peppers are still crunchy but softer, put everything into a blender and blend to create a creamy sauce;
- In the same pan where you cooked the peppers, toss the diced chicken and a glass of red wine. Put the lid on and let it cook for 15 minutes or so;
- Once the chicken is cooked, add the red peppers cream and let the flavours come together;
- Add the olives and the capers, keep cooking for 5-7 minutes more;
- ENJOY!
