A super vegetarian dish, really!
I roast the potatoes for about 1 hour together with all these tasty additions, and I also include some oregano and a secret element… Watch the video to find out! Baked Potatoes with Olives - Italian Style
Equipment
- Knife
- Oven Tray
Ingredients
- 700 gr potatoes
- 1 red onion
- 80 gr black olives pitted
- 3 sundried tomatoes
- oregano
- 2 tsp hot paprika
- salt and pepper
- olive oil extra-virgin
Procedure
- Chop the potatoes in smallish cubes and put in an oven tray (make sure that you have some olive oil at the bottom of the tray;
- Finely chop the red onion and put on top of the potatoes;
- Now it's time to chop the black olives;
- Then slice the sundried tomatoes and put everything in the tray ;
- Sprinkle oregano, salt, black pepper to your taste. Add a couple of teaspoons of hot paprika;
- Pour abundant extra-virgin olive oil on everything and then insert in the pre-heated oven at 180C (356F) for about 1 hour;
- Make sure that you stir the potatoes a couple of times while they are roasting;
- ENJOY
