Today I will show you how to make a great Pasta and Potatoes Italian style. You can keep it as a purely vegetarian dish, or you can add a bit of pancetta (as I did…) to make it even tastier.

This meal can be served as a soup (simply add more water in the final step) or with a more dense consistency (that’s what I did in this videorecipe).

Pasta and Potatoes Italian
Ingredients
- 7 potatoes
- 250 gr pasta
- 150 gr pancetta
- 1 shallot
- 400 gr peeled tomatoes
- salt and pepper
- 20 gr Parmigiano grated
- rosemary
- olive oil extra-virgin
Procedure
- Slice finely the shallot and the pancetta (if you use it in your version) and make them gently fry in extra-virgin olive oil;
- Cut the potatoes in cube (small cubes are better!) and add them to the pan;
- After a few minutes, add the peeled tomatoes, the rosemary and the crust of the Parmigiano Reggiano!;
- Cover everything in water and let all simmer at low heat for 30-40 minutes;
- Add more water as required and put the pasta in there;
- Keep stirring for a few minutes and then...;
- Serve and ENJOY!
