Ingredients

  • 320 gr pasta paccheri
  • 400 gr whole peeled tomatoes canned
  • 400 gr cherry tomatoes canned
  • 30 gr butter
  • 50 gr Parmesan cheese grated
  • 0.5 tsp sugar
  • olive oil extra virgin
  • salt and pepper
  • basil
  • garlic

Procedure

  • Heat a pan, pour abundant oil, add a garlic clove and let warm everything up at medium heat;
  • Add both types of tomatoes and let everything cook at medium heat for about 30 minutes;
  • In the middle of the cooking time, add 1/2 teaspoon of sugar, then some salt towards the end of the cooking of the sauce;
  • Put the pasta in salted boiling water;
  • when the tomato sauce is cooked, remove the garlic clove and blend the whole thing until you get a nice creamy sauce. Add some basil leaves;
  • When the pasta is 'al dente', mix the pasta with the blended tomato sauce;
  • Take the pan off the heat and add the butter. Keep mixing;
  • Now incorporate the grated Parmesan cheese and keep stirring until the butter is melted and the Parmesan well melted;
  • Add some fresh basil on top and...
  • ENJOY!
